It is better to dual wield at high level for pretty much every weapon unless you are using a shield, 2 handing is never needed. I believe it's really preference. I like power stance twinblades as the jump attack is really good and has multiple hits, which is nice when I'm doing a jump attack bleed build.I right hand Eleanora's, and left hand a +25 Twinblade that does 134 bleed. Bleed build up is so fast its completely broken. Just two hand the peeler. The standard r1 combo is plenty fast enough to proc bleed, and the powerstance moveset of twinblades is awful.
